Pollen sits in a climate-controlled dome in one of the world's coolest venues –- the newly opened Gardens By The Bay.

The new restaurant serves Mediterranean-inspired modern European cuisine.

The setting is ace: diners are surrounded by temperate olive trees, herbs and vegetation, complete with a below 20-degree C (68 F) temperature. A nice way to escape Singapore's heat and humidity.

This is chef Jason Atherton’s second venture in Singapore -- see Esquina, below -- and it offers classics from his acclaimed flagship Pollen Street Social in London.
